Our client, Malta’s foremost hospitality player and a partner of the Hard Rock Hotel brand, is seeking a Chefs to set the tone for excellent dining experiences at our upcoming destination. You will be part of a large, international kitchen team serving high-volume buffet and à la carte operations within 4* and 5* resort/restaurant environments. Depending on your level, you will either lead a section, support a senior chef, or build your skills as a junior chef.

  • Chef de Partie – runs an assigned section (e.g. grill, pasta, buffet), organises mise en place, coordinates Demi/Commis chefs and ensures consistent quality and plating.
  • Demi Chef de Partie – supports the Chef de Partie in daily operations, takes ownership of part of the service and assists in guiding junior team members.
  • Commis Chef – handles prep and basic cooking tasks, follows recipes and instructions from senior chefs and keeps the station clean and organised.
  • Pastry Commis Chef – works within the pastry team on desserts, cakes and baked goods, learning techniques and standards from experienced pastry chefs.

Key responsibilities

  • Prepare, cook and present dishes in line with db Group recipes and standards
  • Maintain high levels of food quality, taste and presentation during busy services
  • Follow HACCP and internal hygiene procedures; ensure a clean and safe workstation at all times
  • Work closely with the team to ensure smooth service in buffet and restaurant operations
  • For Chef / Demi Chef de Partie: organise the section, delegate tasks, support and coach junior chefs

 

What we are looking for

  • Previous experience in a professional kitchen:
    • Chef de Partie – approx. 3+ years in a similar role
    • Demi Chef de Partie – approx. 2+ years at Demi / experienced Commis level
    • Commis / Pastry Commis – some experience in hotel or restaurant kitchens
  • Experience in high-volume hospitality (resort, hotel or busy restaurant) is a strong advantage
  • Basic to good level of English – this is the working language in the kitchen and hotel
  • Willingness to work shifts, weekends and public holidays
  • Strong awareness of food safety, hygiene and personal grooming
  • Team spirit, reliability and a genuine desire to grow in your culinary career

FAQ.

Employment with our client is offered on a definite 1-year contract, renewable by mutual agreement. The salary is based on a 40-hour working week, in line with Maltese legislation.
You will also receive Vacation Leave and Government Bonus as per Maltese law. Additional performance bonuses and incentives may be awarded based on TripAdvisor guest reviews.

  • Probation period: 4 or 6 months, depending on position

  • Two days off per week, subject to operational demands (may vary during peak season)

At the moment, our client is not in a position to provide accommodation directly.

Many of our employees find shared apartments or private rooms close to our resort locations with our guidance.

For non-EU citizens (Third Country Nationals – TCNs), a work permit (Single Permit) is required to work legally in Malta.
Candidates are responsible for covering the work visa and permit costs as part of their relocation process.
Additionally, TCNs must purchase specific insurance required for the work permit, which costs €194.

For EU citizens or individuals who do not. require a work permit, db Group provides basic insurance coverage immediately upon employment.
